How to make ordinary garden snails (Helix aspersa ) safe to eat eg. making sure they don't have toxins in their gut.

How to cook them so they don't get too tough.

How to disguise their appearance, I don't fancy them looking too much like the real thing.

Hi there and welcome, valcane

I'm sure there was a thread somewhere about preparing snails for eating.
Have you used the Search facility yet ?
Might be in Foraging section, or Recipes, Preserving, Homebrewing

I just hope I never ever get that hungry.

Welcome Oriole, so that was you on the One Show. I don't tend to watch it that often but saw the piece about snails and was very interested in your recipes.

I'll have another go at them this year and try some of your recipes to see if I can find something I enjoy. I think I've under cooked them in the past so the cooking for an hour in a good stock sounds like just what I need to do.

I'll leave them to the Romans and French.
