Its me again asking for advice again... My poor 3 year old glos. old spot gilt has got to go she cannot get pregnant and she was for breeding, i'm wondering if she's edible? and if so what can i make her into? would hate her to be only fit for the glue factory having invested food, 4xboar visits and 3x AI. Advice greatly appreciated

Perfectly edible, would make some nice sausages or even some nice ham.

Thanks Rob! thats reassured me, just got to find an abbotaire with a big enough tub??!! What age do sows/gilts become unsuitable for eating, or is this just an old wives tale? I must admit I have found the boar taint story a bit of a myth.

They can go any age, just hope you can find somewhere who will take her as i am guessing she's quite big.

Never really, they might just get a bit tougher with age, better slow cooked I guess. Some people mix a minced sow with a porker if they are a bit fatty.

I've never had boar taint, or bull taint, or lamb taint, but maybe I've just been lucky

The world & his wife told me my bulls would taste bad if I'd didn't chop off their tackle- never had any complaints though. Only started doing it so we could graze them with the heifers.

Some people say boar taint is a myth, others say the opposite! I've never knowingly eaten boar, so I can't comment, but if it is a myth how has it arisen? Does it only apply, perhaps, to working boars?

Working boars or boars on jobseekers?

We've had boars up to 15 months & not expereinced it, even after working. At what point it actually becomes a problem (ie what age was the youngest tainted boar?) I don't know, but as it is so vague & so apparently rare, it's difficult to pin down the real cause- the likelyhood being that it is down to a combination of factors inc. feeding, age, working life, handling, transport & killing.

Large pig processing does require a big tub. As your butcher for the name of the abbatoir his bacon pigs comes from?

We sent our 4 yr old tamworth off for sausages last year. By the tiem they'd added rusk etc we had in excess of 2000 sausages. Make sure you have adequate freezer arrangements

I was surprised when we got a quote from our nearest abbatoir
( where does the word come from?)

We did a old non productive sow recently. Did plan to do her all as sausages but some of the cuts were so nice we used them as per normal. She weighed in in excess of 200kg dead weight.

It's French, from abattre meaning to strike down
