A lovely salad for the summer months (I will add the various spellings of halomi, halumi, haloumi to help the search)

Haloumi salad
1 or 2 pieces of Haloumi
1 or 2 chillis
50-100 grams of walnuts
parsley
good olive oil

Heat a pan, add a bit of oil first fry the chillis and walnuts untill the walnuts start to brown, remove from pan to your serving dish
Meanwhile slice the haloumi into pieces about 0.5-1cm thick,
Fry the haloumi slices so they are brown and crispy on both sides
Toss the sliced haloumi with the chill, and walnuts and finely chopped parsely and a splash of olive oil

This is lovely warm while the haloumi is still very soft inside but it also works cold as you still get the textural differences between the haloumi, walnuts and parsley

So do I, it find it a struggle sometimes not to eat half of it while the rest of it is being fried

Sounds delicious. The squeaky texture of halloumi is just wonderful.

I don't like food that squeaks when you try and eat it

I've told you before: you have to kill mice before you try to eat them.

Do you pull the legs off first or just go for it?

And they go deaf if you pull their legs off. Perhaps their ears are in their legs.

I've often wondered why they have a waxy aftertaste
